Suggest a better descriptionPreheat oven to 375. Put 4 tbl oil in shallow baking pan. Mix egg beaters with salt and pepper in bowl. Put breadcrumbs in another bowl. Dredge zucchini slices in egg mixture, then bread crumbs. Place in baking dish so that they are not touching each other. Drizzle with remaining oil Bake 20 minutes, turn and bake another 15 minutes until browned and fork tender.
