For the meatballs:
Place oats, milk, egg, parm, basil, salt and pepper into a
medium bowl and mix well. Add ground turkey and sausage and blend the mixture
thoroughly with your hands or a fork. Form the mixture into 20 meatballs. Put
meatballs on cookie sheet lined with parchment paper in a 375 degree oven for
20 minutes, turning meatballs halfway through.
For the stew:
Heat a dutch oven over medium heat for 1
minute. Add 1/2 tablespoon of oil. Add the onions and red pepper flakes and
some cracks of black peper. Cook until soft and starting to carmelize, 5
minutes. Add the mushrooms. Cook, stirring occasionally, until the
mushrooms have softened, about 5 minutes. Add red peppers, tomatoes broth
and tomato paste. Bring the mixture to a boil. Reduce the heat to a simmer,
cover the pan slightly and cook about 10 minutes. Add zucchini ribbons and
heat through about 3 minutes. Serve with parm and crusty bread.
Halved Recipe: 10 meatballs, 1/2 onion sliced, 1/2 bell pepper, 1/4 tsp salt, 1/4
tsp pepper, 4 oz shrooms, 1 medium zuch, 4 ounce tomatoes, 1/2 tablespoon
tomato paste, 3/4 cup chicken broth
