Albondigas are a favorite comfort food in Mexico. Served for lunch or dinner, albondigas are always welcomed. This variation uses pork rinds instead of breadcrumbs. Yum!
• Combine the pork rinds or bread crumbs with the ground meat, egg, salt and pepper until fully integrated. Shape into small meatballs (about the size of a golf ball). Reserve.
• Heat oil in a deep pot over medium heat. Add the Morelos Cooking Sauce and fry for 1 minute. Add the chicken broth or water, bring to a boil, reduce heat and simmer for 10 minutes. Taste sauce and season with salt if necessary. Add meatballs one by one and cook under medium heat for 15 minutes or until fully cooked. Serve. Provecho!
