Suggest a better descriptionAdd the water to the bread crumbs, just enough to moisten them, then beat in the egg and soy sauce. Add the oregano, black pepper, cayenne, garlic, onion, and cheese. The mixture should be loose and muddy; if it is too crumbly, add a little more water or soy sauce by tablespoons.
Add the beef, a little at a time, mixing thoroughly. Take a level, standard ice-cream scoopful, roll it out between your hands a few times, and place on a clean plate. You'll get 12-15 meatballs.
Heat the olive oil in a 9-inch skillet over medium-high heat. Brown the meatballs, covered, turning 3-4 times to crust all sides, 7-8 minutes. When done, drain on a plate lined with paper towels.
Scrape the skillet clean, but do not wash - leave a film of oil. Pour about 1 cup of the pasta sauce into the skillet and heat over low heat. Add the meatballs gently, then more sauce, leaving the meatballs about an inch above the sauce. Simmer, covered, for about 20 minutes. (By now you should be heating the water for the pasta)
Turn the meatballs two or three time while cooking. Add 2 to 8 tablespoons of water if the sauce gets too thick to prevent scorching or sticking. The sauce will reduce as it simmers again, incorporating the flavor of the meat. Serve hot over the pasta of your choice.
