Preheat oven to 375F or Convection to 365F
In a large skilled cook the bacon over medium heat until fat begins to render out and bacon starts to brown. Add onion and a pinch of salt, light brown the onions and garlic and stir until fragrant and add Pizza Seasonings, remove from heat. In a bowl, add the bread crumbs, oats, buttermilk, egg, ketchup, mustard, salt, pepper, and mix thoroughly. Add the parmesan cheese and bacon/onion/herb mix and combine. Mix in, by hand the ground beef until thoroughly combine. It will come together and make a nice portion of meatloaf.
Prepare a baking sheet with sides and lightly spray with cooking oil, (canola spray is my favorite). Divide into 4 indidual meatloafs and place on the pan. Brush on some ketchup before putting in the oven. Cook for about 30 minutes (20 in convection oven) or until internal temperature is between 145-155F. Take out of oven tent with foil and let sit about 5 minutes (temp will continue to go up). Serve with tomato salad, fresh vegtables or your favorite side dish.
This is a great quick meal you can make in no time at all. Be sure to mince your onions and garlic. Be careful not to burn the garlic.
