Serves 10 as a main & side (495 cal PP when served over 100 cal of rice PP) - yes, I do think the portions are small, so I WOULD serve this as a 400 calorie portion next time! NOT safe for kids; I checked with the pediatrician!
This recipe must be prepared 24 hours in advance. The chicken marinates in the amazing sauce overnight.
3 lbs Smart chicken contains 1440 cal (120 cal/4oz). The rest of the recipe contains 2512 cal. We loved the marinade on rice (and there's a TON of it), so I would serve this with cal of rice as a main & side. The chicken and marinade contributes 395 cal PP so that you can add 100 cal of rice. Rice: 45g = ΒΌ cup = 160 cal. For 200 cal, cook 56 grams rice with 4oz water. I noticed that the recipe suggests serving it over couscous (230 cal in 62g per BRM); for 200 cal, cook 54g couscous.
