1. Cook farro according to package then let cool down to room temperature.
2. Roast asparagus with a light coat of olive oil, salt and pepper at 425 for approximately 13 minutes. Let cool to room temperature.
3. Meanwhile, make the dressing for the salad. Whisk together the wet ingredients then mix in the dry ones.
4. Assemble salad. Toss farro, roasted asparagus, cucumber, tomatoes, onions, and olives together to desire ratio. Assembly is truly up to your discretion. Toss with desired amount of dressing then sprinkle with feta.
5. Enjoy!
