1. Preheat oven to 425.
2. In food processor, add onion,garlic, basil, mint,and parsley, and pulse until finely chopped. Scrape into large bowl. Place 3 bread slices in food processor and pulse to make fine bread crumbs. Add bread crumbs to large bowl with onion mixture. Add egg white, tomato paste, red pepper flakes, all spice, cinnamon, salt and pepper and stir to combine all ingredients. Add Lamb and bison. Mix together all ingredients until just combined. Roll a bit of meat mixture into a ball and see if it holds it's shape easily. If too moist, make more bread crumbs from one slice of bread and add to mixture.
3. Using a small ice cream scoop or a soup spoon, scoop out meatball mixture into 28-30 portions and roll them into golf ball sized rounds. Bake in oven for 18-20 minutes until lightly browned outside and cooked through.
4. In a large sauce pot, heat sauce until bubbling. Add meatballs and simmer in sauce to marry flavors, about 10 minutes. Some meatballs may break apart a little. This will thicken and add more flavor and texture to sauce.
5. Serve over your favorite whole wheat pasta or other whole grain such as quinoa.
