Really tasty and quick lentil dish - the non soak puy lentils work fantastic
Put lentils in large saucepan, add cold water to cover and set over high heat. Bring to bil, reduce, and simmer for 2-0 mins until tender with some bite. Drvain and set aside. Alternatively, use canned presoaked lentils.
Oil in saucepan, high heat - add onions, garlic, oregano and chilli flakes, cook for 5 mins, stir often until soft. Add capers (if using), tomatoes, passata, lentils and 250 ml water. Bring to boil, reduce heat and simmer gently for 10 mins, stirring.
Spoon into serving dishes, top with olives and feta, serve with nice bread.
Get good quality olives.
