Boil potatoes and onion in salted water until fork tender. Drain and peel and dice the potatoes when they are cooled. Slice the onion julienne style. Place all ingredients in a large bowl and mix well.
You can add fresh tomato slices and/or hard boiled egg slices for additional flavor and color.
