Spray 10-inch frying pan with cooking oil spray. Heat to medium hot and put chicken strips in frying pan. Add garlic. Turn chicken once when lightly browned, cooking about 5 minutes.
Add all other ingredients, except parmesan cheese. Cover and turn down heat. Let simmer for about 15 minutes until vegetables are tender. Sprinkle parmesan on top and serve with over pasta or with breadsticks.
Dish is also great without chicken. For a bit more flavor, I use diced tomatoes with green chili peppers and serve a side of garlic bread w/mozzarella cheese. One of my favorite dishes!
