Peel, Thaw, & Remove Tail on Large Shrimp. Season Shrimp with Salt, Pepper, Old Bay, & Garlic. Steam in steam basket for 2-3 minutes or cook in a frying pan until pink. Avoid overcooking.
Chop peppers & Scallions.
In a pan on medium-low add Peppers, Scallions and heat to warm. (Do not saute)
Once shrimp is cooked, add feta, shrimp, balsamic vinegar and rice to pan. Mix to warm. Do not cook.
Best to use raw shrimp quality. Do not cook ingredients in pan, just warm. If using precooked shrimp, add pepper & salt to pan instead of shrimp.
