Excellent veggie dish for holidays.
In a saucepan, heat olive oil over medium heat. Add onions and sauté' until soft and clear, about 10 minutes. Add garlic and cook briefly until soft and golden brown. Add tomatoes, salt, pepper, oregano, parsley, and a cup of water. Reduce heat, cover, and let simmer until beans are tender, about 12 minutes. Taste and adjust the seasoning. Spoon onto warm platter and top with Feta cheese.
