Preheat oven to 325 degrees. Grease and flour two 8" x 4" loaf pans. In a large bowl, beat eggs until light and frothy. Mix in oil and sugar. Stir in zucchini and vanilla. Combine flour, cinnamon, baking soda, baking powder and salt. Stir into egg mixture. Divide batter into prepared pans. Bake 60-70 minutes or until done.
The walnuts are optional and I prefer to make the recipe without them, but it is also very good!
