Butter, onion, garlic simmer in large pan. Add in chopped Serrano peppers (don't touch peppers!)
Cut tomatoes while simmering
Add spices and let simmer a bit
Add chicken (cubed) and turn up heat a bit. Stir, sear them (just cook outside) until white
Add tomatoes, coconut milk, and a lot of spinach.
Leave bubbling a little bit for 20 min. Covered. Stir every now and then.
Add little lemon juice at the end to thinker
But rice in when cooking for 20 min. 1 cup basmati rice.
