This beautiful and simple salad is sweet, salty, and crunchy. And it works with any melon.
PREP PROSCIUTTO: in microwave on towel-lined microwave-safe plate covered with paper towel--on HIGH, 2 min, or until crisp.
Repeat with remaining prosciutto and then break prosciutto into large pieces.
IN A SMALL MIXING BOWL: whisk together mint, olive oil, white wine vinegar, honey, salt, and pepper.
IN A SERVING BOWL: toss greens and chopped melon with vinaigrette and top with cooked prosciutto, crumbled feta cheese and chopped pistachios.
The picture looks very appetizing. Looks like melon is cut into large slivers instead of chopped.
