Preheat oven to moderate - 180C
Melt butter, beat in icing sugar. Add sifted flour and cornflour, mix well. Roll into balls, place on a greased tray and press down with a fork.
Bake until golden brown - about 15-20 minutes. When cold stick together with filling.
Filling:
Mix all ingredients to make a creamy mixture.
Make sure biscuits are cold before putting the filling on and sticking together. The fork pressing does a design in the top so you can use just about anything but do press the balls of dough down.
self raising flour = To convert plain flour into self-raising flour, add two teaspoons of baking powder to each cup of plain flour. Adding one teaspoon of cream of tartar and half a teaspoon of bicarbonate of soda to one cup of plain flour gives the same result
