My shrimp ceviche. Tried and true recipe from cook at Puerto Vallarta Resort. Simple and tasty!!
Lay out shrimp in bottom of glass baking dish. Pour lemon and lime juices over them cover and refrigerate for 3 hours. Juice will "cook" the shrimp.
Toss with remaining ingredients and refrigerate another 2 hours.
Sea or kosher salt and pepper to taste
Enjoy with tostaditas (chips).
