Heat some olive oil in a large frying pan and add the onion, garlic and red chillies and fry until the onion turns translucent (around 5 to 10 minutes).
Add the chopped tomatoes, kidney beans, chilli powder, cumin, salt and pepper and bring to a simmer for a few minutes.
Crack in the 6 eggs, evenly around the frying pan and cook until the eggs are to your liking (break the yolks if you want them cooked hard).
Spoon each egg and some of the spicy tomato sauce onto each tortilla and sprinkle over some cheddar cheese.
