Great for large party,
(Optional to saute mushrooms, onions, & bell peppers to add layer into casserole, really good)
1. Cook Chicken in boiling water, save the water you cook the chicken in to cook rice in. Once
cooked tear chicken into pieces & season with chicken seasoning & cumin to taste.
2. In a pot add 2 cans of cream of mushroom & use those cans to measure 4 cans of the chicken
broth to mix in pot & bring to a boil. Once boiling remove from heat - use the cans to measure
out 4 scoops of the rice, stir, cover, & set for 5 minutes or until liquid is absorbed. Fluff with
fork.
3. Add spices of cumin, salt, & pepper to rice
4. In microwave safe bowl add cheese & rotel to microwave to melt, takes about 1 minute
4. Start layering in casserole dish
Layer starting with bottom:
Rice
Cheese Rotel Mixture (use half the mixture)
Tortilla Chips
Chicken
Cheese Rotel Mixture (use the other half)
Can top the casserole with just cheese if you would like
Cover with aluminum foil, removing it the last 15 minutes
Bake at 350 degrees for 45 minutes...enjoy!
