Casserole tastes like a chicken fajita
Preheat oven 350.
Prepare rice according to package directions.
Cut chicken breast into bite size pieces. Heat olive oil in large skillet, sauté chicken until lightly browned and no longer pink inside. Add frozen pepper-onion mix (or use fresh) to skillet and cook, stirring frequently, until soft. Stir taco seasoning, salsa and hot cooked rice into chicken and veggie mix, heat through. Pour all into casserole dish and top with cheese. Bake 20-25 minutes until cheese is browned. Serve with sour cream if desired.
