Cheesy Mexican cornbread

Preheat oven to 350 degrees
Grease 9x9 glass baking pan (if aluminum expect the bottom to brown a lot more)
Mix wet and dry ingredients in separate bowl. If you have different sizes make sure the wet is the larger of the two.
Pour the dry ingredients into the wet, and stir until combined. Don't over stir. This is like pancake batter; lumps are okay, they will cook out.
Hold back about a cup of cheese until the dish is done baking.
Pour a layer of batter into the greased baking sheet, and spread evenly with a spatula (you can also shake but that may take a while since the grease may cause the batter to just move around without actually spreading). Top with cheese, then repeat, always making sure to end with cheese until your supply is exhausted.
Bake uncovered in the oven at 350 degrees for 45 minutes, or until tester comes out clean. Be sure to test several spots, since this is a very thick dish and some ovens may not heat evenly.
When you're satisfied with doneness, sprinkle your remaining cheese over the top, then leave it in the oven for at least 5 minutes to let the fresh cheese melt.
Let rest for at least 10 minutes before serving.
