Marinate flank steak with southwest marinade. Grill, let sit for 10 minutes. Slice it.
Combine oil, vinegar and mustard and mix well for a dressing. Toss lettuce in dressing.
On a plate, arrange lettuce, corn, black beans, roasted red peppers, salsa, scallions.
Cover with slices of vocado and strips of steak.
Cover with tortilla strips and cheese.
