A simple mexican spin on Lasagna.
In 9 x 13 baking dish spread about 1/4 cup of enchilada sauce.
Begin by layering 2 tortillas spread with refried beans over the sauce.
Sprinkle some green chilies, a tablespoon of the sauce and cheese.
Make as many layers as you have product usually 5 or 6 per stack.
Pour any remaining sauce over the piles.
End with a layer of cheese on top.
Bake 20-30 mins in a 350 degree oven.
Cut each mound of tortillas into wedges or just make one for each adult.
Garnish with whatever you like.
- For a non vegetarian dish, you can add ground beef or taco seasoned beef to each or every other layer.
- If you don’t want the edges of the tortillas to brown, you can cover the whole pan with foil for 15 minutes and then uncover for the last ten minutes.
