Authentic Mexican Rice (fried)
Pour oil into frying pan until surface is covered with oil. Warm on low-medium heat until a droplet of water bounces off of oil. Pour rice on to the surface of the pan until pan is covered. On medium heat simmer rice until rice is multi-colored tan and brown. Add tomato paste and mix thouroughly. Add a little oil if needed. Add Chicken broth. Boil rice according to package instructions. Rice will split open when ready. Add Rotel to your preference and mix evenly. Serve.
Be sure not to over fry rice.
