A spicey twist on a classic.
Start by browning ground beef, onions, and bell pepper in olive oil. When vegetables are fully cooked drain excess grease. Next chopped potatoes and boil until tender. At this point preheat oven to 350 degrees. Drain potatoes. In a large bowl add cooked potatoes, drained sweet potatoes, butter and milk. Mash until smooth. Now add in taco seasoning to cooked beef mixture, and cook according to package directions. Once the beef mixture is cooked with taco seasoning spread it in the bottom of a round casserole dish. Next add the canned corn on top of the beef mixture. Then spread the mashed potatoes and sweet potatoe mixture on top of the corn. The final step is to sprinkle the shredded cheese on top and bake at 350 degrees for 25 to 30 minutes!
