1. Preheat oven to 400°F.
2. Heat cast-iron skillet over medium heat. Add ground beef and brown for 8 minutes (safe internal temp. 160°F). Set beef aside on a paper towel-lined plate, allowing excess grease to drain.
3. Add onion to skillet; cook 2 minutes. Return beef to skillet; add water, taco seasoning, rice, and 1 cup cheese. Stir to combine, then sprinkle remaining cheese over the top.
4. Bake 12-15 minutes, or until cheese is bubbling and starting to brown.
5. Let rest for 10 minutes before serving with toppings.
To customize, add a can of drained black beans or substitute ground turkey.
