Non-cobbed version of elote or mexican street corn, simple dish for parties.
First step is to oven roast the corn and get those beautiful crunchy bits that steaming or boiling cannot achieve and is the secret to great tasting elote.
Cojita cheese can be hard to find, have had good success using feta or parmesan. Pending if you want the cheese flavor to stand out or not, parm is decidedly stronger flavor.
Typically for larger portions (or being lazy) I will use frozen corn and just add to a large sheet pan with butter and salt spread evenly . Oven roast at 450 until the corn is cooked and some of the bits are slightly brown. Around 20-40 minutes pending if the corn is frozen or not and the oven used.
Once the corn is roasted, allow to cool for 15 minutes.
Large bowl add sour cream, mayo, lime juice, chili powder, crumbled cheese and cayenne(optional). Mix. Now add corn and blend. Finally add the chopped fresh Cilantro and mix softly. Store in fridge for at least 1 hour and up to 24 hours.
You can also serve the dish warm, but tend to serve as a cold side dish.
Serve with fresh lime wedges, be prepared for it to disappear quickly.
Corn freshness is less important in this dish, the critical ingredients for a good flavor is the ciltrano and lime juice along with properly roasting corn. For smaller servings I will use corn on cob and just roast the cobs either in oven or grill.
