Preheat a cast-iron skillet to medium-high.
In a small bowl, stir together the syrup, mustard, oil, garlic, salt, and pepper.
Place the chops and mustard mixture inside a large Ziploc plastic bag, then shake thoroughly to coat the chops.
Place the chops on the skillet, cooking 3 to 4 minutes per side. In the last minute of cooking, pour the remaining mustard mixture onto the chops.
Side: Steamed Broccoli
1 head broccoli
Salt and pepper to taste
Break broccoli head into bite-sized florets.
Boil an inch of water in a saucepan. Add the broccoli to the boiling water.
Cover and reduce heat to medium. Cook for 6-7 minutes, until florets are easily pierced with a fork.
Drain and season with salt and pepper.
