This family recipe is easy to make, but read the entire recipe before making. Things move fast, especially at the end. We generally put the ingredients for each step in bowls before starting. Microwave wattage varies, which will adjust your times.
Stir 1 cup sugar and 1/2 cup Karo light corn syrup in a 2 quart glass measuring cup. Microwave on High 4 minutes.
Stir in 1 cup roasted, salted peanuts. Microwave on High 3 1/2 minutes (until peanuts are golden brown).
Stir and blend well 1 teaspoon butter and 1 teaspoon vanilla extract. Microwave on High for 1 1/2 minutes.
Add 1 teaspoon baking soda and stir well.
IMMEDIATELY dump on greased cookie sheet or Silpat and spread.
Cool 30 minutes. Pick up with spatula and break apart carefully.
Want to clean up easily after making this? Soak the measuring cup and spoons in warm soapy water for a while.
