Wash and quarter each potato, place in a large saucepan with water and salt cook till el dente.
Cool potatoes, slice each quarter potato then fry in 1/4 cup olive oil heated to 350 deg till crispy.
Slice breakfast sausage.
Place fried potatoes in a warm place.
Put sliced breakfast sausage in pan to brown. Put onion and green pepper in pan with sausage and cook till translucent.
Mix with the potatoes and serve.
