Cook all in Large Heavy Bottom Lg Pot.
In the Oil cook the Chopped Onions and Garlic (if fresh), and Celery.
Stir in the flour and stir to make a Roux (about 10 min). Add oil if needed.
Put in Tomatoes w Juice and Chicken Broth. Stir till a little thick. Add 4 to 6 Cups water.
Add everything else to pot except Shrimp, Okra and Rice.
Let lightly boil for 1/2 Hour.
1 to 1/2 hour before ready to serve add Shrimp and Okra and cook till just done.
Make Rice and serve w Gumbo.
I also put in a little Louisiana Hot Sauce to taste.
After all finished - you might want to add a Little Salt to Taste. Not till done though because Ham and Sausage have a bunch of salt. Some Chicken Broth is very salty also.
