In a medium bowl, mix together the oil, vanilla and egg. In a large bowl, mix together the flour, baking powder, soda and salt, set both bowls aside
In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and both sugars on medium low for about 3 minutes, until light and fluffy. Add the peanut butter and continue mixing until incorporated, then scrape down the bowl
With the mixer on low, add the oil mixture in a steady stream and mix until fully incorporated
Scrape down the bowl, and add the flour mixture and mix on low until just incorporated, then scrape down the bowl again. Remove the bowl and add the chocolate and mix everything together with a rubber spatula. Scoop the batter into a medium bowl and cover tightly with plastic wrap, refrigerate for at least 2 hours, preferably overnight
Preheat oven to 180 degrees. Line two sheet pans with baking paper, scoop balls of dough, shape them and place on pans, 5 cm apart, you should be able to fit 12 cookies on each sheet. Freeze the cookies on the pans for 15 minutes, then bake for 15 minutes
Take cookies out of oven and let cool for a few minutes and then transfer to a wire rack to finish cooling
