If you're in the mood for something with garlic and cheesy pasta, you'll love this dish. The pine nuts are a nice crunch. My boyfriend asks for this dish all the time!
Cook pasta al dente per package instructions with one whole garlic clove; remove pasta from water. Save the pasta water in case you need it to moisten the finished dish.
While the pasta is cooking, saute pine nuts in the olive oil until golden brown; remove pine nuts from oil and set them aside. In the same oil, saute minced garlic and red pepper for 3-4 minutes on low heat. Add spinach and saute until wilted (about 3 minutes). Stir in butter.
Mix all prepared and remaning ingredients together in a large bowl. You may need to "thin" out the pasta with some of the reserved pasta water.
