Suggest a better descriptionCombine carrots, celery, onion and garlic in slow cooker. Pour in broth and stir in tomatoes with their liquid, italian seasoning, salt and pepper. Cover and cook on low for 4 to 6 hours.
About 30 mins before serving stir in the escarole and beans. Cover and increse heat to high and cook about 30 mins more.
Top with parmesan cheese.
