This is a variation of the other one (smoked sausage). Basically, you can put any combination of vegetables and with or without meat.
Preheat oven to 350. Prepare cupcake pan with cooking spray, set aside. In a large bowl, whisk eggs until blended. Add remaining ingredients, stir until well blended. Distribute evenly into cupcake pan. Bake for 20 min. Remove from oven and set aside to cool. Store and/or take with you as you like.
