These taste like little mini margerita pizzas. They are a hit at parties. I premake them, freeze them, and then warm up at 350F for 15 minutes.
Roll out puff pasty. Brush pesto sauce on pastry.
Cut into 16 pieces, just slightly bigger than a mini muffin tin. You can stretch the dough slightly to fit it in a greased mini muffin pan.
Evenly distribute the tomatoes and mozzarella.
Bake at 400F for 15-20 minutes.
