Heat oven to 350 degrees.
Spray miniature muffin tin cups with cooking spray.
In small bowl, combine crushed cereal, mashed banana, and boiling water; set aside 5 minutes to soften.
In medium bowl, beat by hand milk, egg, sugar, and butter. Mix in flour, baking soda, and salt. Add cereal and banana mixture and stir only until combined; do not over-mix batter.
Fill muffin cups 3/4 full.
Bake 15-17 minutes. Remove from oven and cool in pan for 1 minute. Remove from pan and place on cooling rack.
Serve warm or room temperature.
Depending on size of mini-muffin tin, this yields 36-48 muffins.
