Lightly spay muffin cups with oil.
Evenly divide ham, corn,, and cheese in each muffin tin
In medium bowl whisk to combine eggs, milk, parsley, salt and pepper.
Ladle the mixture over ham and cheese. Fill 3/4 high.
Bake until puffed and set in. The center, about 18 minutes.
Carefully run knife around edges to loosen and remove.
Serve hot from oven, or cool completely, wrap individually and freeze for up to 1 month.
