Pampered Chef Season's Best Recipe
Butter 6 prep bowls with 1 tablespoon butter. Sprinkle prep bowls with 2 T. sugar. (Use sugar to "flour" the bowls.) Thinly slice one lemon and place a lemon slice at the bottom of each bowl. (Remove seeds from the slices.) Put dry cake mix into bowl and use fork to crush any lumps. Add 1 T. melted butter, zest from second lemon, egg and sour cream. Whisk one minute or until smooth. Batter will be doughy. Scoop batter evenly into prepared bowls. Place bowls in a circle in microwave (on turntable if you have one). Microwave on high for four minutes or until wooden pick inserted in center comes out clean. Carefully remove cakes from microwae and cool in bowls for five minutes.
Meanwhile, for glaze, juice lemon used for zest. Melt butter. Add lemon juice and sugar and microwave on high for 30-60 seconds or until boiling.
To serve, tap sides of bowls and invert on plates. Drizzle with glaze.
