Heat oven to 350
Fill each cup of muffin tin halfway with bread cubes
Top each cup with slice of cream cheese
In small sauce pan over medium heat, heat olive oil, add ham, scallions, and pinch of pepper
Saute for 5 minutes. Stir in half and half, bring to simmer, remove from heat.
In medium bowl, whisk together eggs and thyme. Whisk into half and half mix.
Pour egg mix over bread in cups, bake 15 minutes.
