meringues for christmas
1. Preheat oven to 100C.
2. Line a baking tray with baking paper.
3. Place egg white and cream of tartar in a bowl and use an electric mixer to beat until soft peaks form.
4. Add castor sugar, 1 tablespoon at a time, beating well after each addition until meringue us thick and glossy and sugar has dissolved.
5. Add a drop of food gel for colour.
6. Use a 1cm fluted nozzle inside a piping bag.
7. Pipe very small meringues onto baking paper.
8. Bake 45 minutes - 1 hour until meringues are dry to the touch.
9. Leave in oven, turned off for an hour to cool.
10. Remove from oven to ensure cool before placing in air and moisture tight container to store.
Can be stored 2 - 3 weeks in cool place with no direct sunlight or frozen. Note: mpoisture will affect meringue when defrsoting.
