Whisk together eggs, milk , salt, pepper and parsley, mix well.
Preheat oven to 375 degrees.
Spray MINI muffin pans with non stick spray.
Sprinkle bacon, cheese and other mix ins in to the muffin tins.
Pour a bit of the egg mixture into each.
Top with garnish as desired: cherry tomato slice, a bit more cheese, etc.
Bake at 375 for 12-20 minutes, until set and a bit browned.
