Preheat oven to 210c.
Generously grease muffin pan (about 1/3 cup capacity).
Using fork or whisk, beat eggs, cream, onion, nutmeg, salt and pepper in a small bowl until well combined.
Using an 8cm diameter round cutter, cut 9 circles from each sheet of pastry and line each muffin hole with these circles of pastry.
Evenly divide cheese and ham between pastry cases and spoon approx 1 tablespoon of egg mixture into each case.
Bake for 20-22 minutes or until quiches are golden and puffed.
If you intend to re-heat next day, reduce cooking time by approx 2 minutes to reduce risk of over-cooking next day.
