Preheat oven to 375. Prick sweet potatoes with a fork and microwave for 3 minutes. Remove and let cool, then peel. Cut into thin slic(about 1/8 inch).
In saucepan, saut? onions in butter until soft and slightly caramelized. Stir in nutmeg then add flour and whisk until incorporated. Add
chicken broth, whisking until combined and then cook 6 minutes until slightly reduced. Add ? cup guyere.
In small bowl, combine parmesan, remaining gruyere and bread crumbs. Layer 1 tablespoon of onion/cheese mix in baking dish. Layer with sweet potatoes and more cheese sauce. Top with the bread crumb mix and bake until potatoes are creamy and soft, about 30 minutes.
