Put canola oil in bottom of pan
Heat oil
Add chopped onions and leak
Cover pan and sweat onions/leak until softened
Add cut carrots, celery, zucchini
Add Italian seasoning
Add chopped parsley
Boil and simmer for 30 minutes
Add white beans and frozen peas
Serve soup with grated Parmesan, parsley, basil, and minced garlic
