Make simple syrup:
Combine water and sugar in a small saucepan.
Bring to a simmer for 5 minutes, stirring.
Remove from heat.
Stir in the bunch of mint and steep for 15 minutes.
Strain, then place the syrup in fridge.
(Lasts 1 week.)
For the cocktail:
Combine 1 oz of the cooled syrup with a cup or so of crushed ice and 2 oz of bourbon in an Old Fashioned glass.
Garnish with mint sprig.
