Place Snocream, icing sugar, essence and meringue powder in the food processor and whizz until smooth.
Slowly add the water to incorporate, scrape down sides and whizz again.
Add extra water until the buttercream is a thin consistency.
Use buttercream to stick cake to cake board.
Cover cake top first, then sides.
Cover acrylic board with Press N Seal, put on top of cake, then refrigerate.
Bloom gelatine in 100ml water
Combine the glucose, 60ml water and sugar in a sauce pan and bring to boil, swirling constantly. Use a lid for condensation.
Add the bloomed gelatine and condensed milk, and whisk smooth
Pour the mixture over the chocolate and whisk until smooth
Pour through a strainer into a clean container and colour as you like. Use as bright colours as possible.
Blend with a stick blender to remove air bubbles.
Once it has cooled to 28-32°c, pour over cake from the outside in. Use a blowtorch to aid melting.
Freshly-made glaze can be stored in the fridge in a clean airtight container for up to 10 days.
The mirror cake will stay shiny for a day without a clear glaze finish. The cake will dull if refrigerated.
The glaze itself, on a cake, does not need to be refrigerated.
