Suggest a better descriptionDissolve Yeast in warm water and add a little sugar.
Heat Milk, add sugar, salt and shortening. When lukewarm, add yeast and eggs. Add some flour and beat well.
Continue adding flour and beating well until you have a soft batter which sort of "pops" when you beat it. Let Rise until double in bulk. Poke down once and let rise again. (at this point I added a little flour around the edges of the bowl and pulled flour away from the bowl, as it is a little sticky, then let rise)
Put plenty of sifted flour on table and pour part of the dough on flour. Knead in enough flour to make right consistency, stiffer dough for donuts than for sweet rolls. (I just laid on flour, turned over, rolled out, DO NOT OVER KNEAD!!!)
Roll out 1/4 inch thick, cover with melted butter, sugar, cinnamon and Pecans if desired. Start at edge and roll into long roll. Cut into 1 inch slices, put on greased cookie sheet. Let rise, then bake at 400 degrees for 8-10 min. Glaze
For donuts, roll out dough and cut with donut cutter. Let rise until double in size then fry in hot (deep) oil. Use wooden spoon handles over bowl to drain. When dry dip in glaze.
Icing: powdered sugar and boiling water. Use thicker for rolls than donuts.
