Suggest a better descriptionHeat the oil in large saucepan, fry the leaks until softened. Taken out and put aside.
Fry garlic and mushroom for 5 minutes. Add the beans (rinsed and drained), tomatoes, tomato puree and 3 tbsp parsley, plus salt and pepper. Bring to the boil, cover and simmer gently for 20 minutes.
Make the cheese sauce by melting butter and adding the flour. Cook for 1 minute. Remove from heat and gradually blend in the milk. Bring to the boil, stirring constantly until mixture thickens. Remove from heat and stir in the egg, cheese plus salt and pepper.
Transfer beam mixture to an ovenproof dish and arrange leaks on top. Pour cheese sauce over the leaks.
Bake in preheated oven at 190°C (375°F) for 30 minutes or until topping is golden. Garnish with remaining parsley.
